Dominica Callaloo

 

 

Ingredients
Provision (1 cup grated)-local Dominican vegetable (optional)
Potato (6-8 diced inch cubes)
Carrots (1 cup grated)
Onion (1 cup grated)
Spinach/Callaloo leaves (1pound chopped)
Seasoning Peppers (5) -local Dominican pepper (can use green chili pepper instead)
Green Onion/Chives (minced 1 cup)
Okra (1 cup chopped finely)
Chicken stock (6 cups)
Crab meat (1/2 pound)
Salt and pepper to taste
 

Directions

First, put the spinach and 6 cups of chicken stock in a pot. Add potatoes, carrots, onions, seasoning peppers, green onions, and crab. Cover and let it cook for about 30 minutes on medium heat. Add okra for about 8 minutes. Add salt and pepper to taste. You can puree the soup in a blender or food processor or enjoy as a hearty soup.
